ROSKILDE FJORD

Sea Wormwood

(Artemicia maritima).

Sea wormwood is a typical plant on almost all the islands in the fjord, and there are dominant and sub-dominant populations in many places. It grows in the upper part of the vegetation zone typical of the flat islands – as a rule on and around the strandline. The remains of sea wormwood plants are used as nesting material the following year by black-headed gulls.

This is an excellent plant for flavouring schnapps. All you need is a bottle of schnapps or vodka, a sprig of fresh wormwood and two to three hours’ patience – certainly no longer – and you have a lovely bitter drink.

NB this plant is poisonous if used in large quantities
